I recently found this recipe for kidney bean, carrot and cumin burgers on a website called Jack Monroe and as my partner is vegetarian, I decided to give this a go as we are always on the look out for tasty recipes that we can both enjoy. One burger costs around 10p to make and turned out to be a really tasty meal!
You can make burgers for the whole family for under £1 which I am sure all of you will be happy with.
To make 4 burgers, you are going to need:
a 400g tin of kidney beans
1 peeled and finely chopped onion
1 grated carrot
a teaspoon of ground cumin
a handful of finely chopped fresh coriander
a splash of oil, plus 2 tablespoons to fry the burgers
1 heaped teaspoon flour, plus another to shape the burgers
As you can see from the ingredients, you can make a great tasting burger for very little and can even try swapping the oil for coconut oil to lower the calories.
